Job Description
- Interested in specializing your pastry training? Can’t stop obsessing over everything chocolate? Bay-area chocolate company Au Coeur Des Chocolats has 2 internships now available!
This internship is focused around specialized confection training: each intern will have a unique opportunity to learn about confection and candy-making from one of the leading chocolatiers in the Bay Area. It will be a fantastic hands-on experience of working for and producing a variety of products for a growing local chocolate company.
Interns will learn:
- Several different methods of Tempering
- Spraying & Airbrushing
- Making molded truffles: shell, filling, depositing, and backing
- Making enrobed truffles: ganache and process of enrobing
- Dragee process
- Making of: caramel, pate de fruit, Pralines, and more
- Product development
- Recipe development
- Possibly showpiece design and construction
(Certain information is propriety and a non-discloser agreement will be signed. )
- In addition, each intern will uphold the values of proper self-presentation, self-motivation, service, and respect as part of the Au Coeur Des Chocolats kitchen.
- This is not a paid internship.
Requirements
- The internship is a minimum of 12 hours a week, but can include more hours, and lasts a minimum of 4 months. Schedules are set weekly; reviews are giving weekly (verbally) and bi-monthly (written).
